Desert desserts – White chocolate damper is the perfect track side treat!

We’ve covered cooking dinners in your Bedourie Camp Oven, but we are yet to give you the recipe to one of the sweetest and richest campsite desserts that we’ve ever made.

Firstly, get your campfire roaring and preheat your Bedourie camp oven on a shovel load of hot coals from the base of your fire, whilst you are waiting for your Bedourie Camp Oven to preheat, now is a good time to get your damper mixture happening.

When mixing up damper, you don’t need too much in the way of ingredients, and judging the mix by eye is often our most favorite way of mixing up our damper mixture.

Take about 1 cup (or 2 good handfuls) of self-raising flour and pour it into a large bowl that would work for mixing! Then you can add about 1-2 teaspoons of salt. Its time to add the water, this bit can be awkward, so we usually put a small indent in the middle of the flour so the water can easily pool in the middle.

Next take one of your hands (preferably the cleanest) and thoroughly mix the lot together, its best to add water slowly, and gradually increase the moisture, this way you will get a nice consistant dough, our favorite consistency is difficult to pull apart, but soft enough to mould into shape.

This is the fun bit. Tear off portions of the damper mixture, enough for everyone at camp, and place 1-2 pieces of white chocolate inside the mixture, it is important to seal the chocolate inside the damper very well, this will make sure that you don’t get a big mess inside your Bedourie camp oven.

Once all the damper pieces are filled and sealed, you can open your Bedourie Camp Oven and give a nice even dusting of flour to prevent sticking. Place all of your damper rolls inside, replace the lid, and get a fresh set of hot coals to cover the top.

Leave the lot to cook for approximately 15 minutes, check that they are all golden brown, and flip them if necessary, once they are cooked evenly, you can give them a good flick with your finger or a tap with the back edge of your knife if it sounds hollow its ready to eat!

Pull them off the heat and let them cool for about 3-5 minutes, then dig in! the Recipe is simple but it is sure to put a smile on the whole campsites face and make you the most popular person at camp!

The reward of chocolate filled damper after a long day on the tracks is sure to go down well and If you aren’t into sweet treats, this damper recipe can be easily altered to only include the salt and flour, and cooked as a loaf, going down perfectly with your campfire stews and is the perfect replacement for fresh bread, taking just a few minutes to mix and a few more to bake, you’ll have a new traditional favorite in the repetoir that will change the way you camp!
