BBQ Bacon Stuffed Mushrooms!

If you are going to cook up an epic feed at camp, you have to cook up an epic side! When it comes to an epic side you just can’t look past the good old stuffed mushroom. Now you can pretty much use any ingredients you want to do this awesomely delectable dish but I have got a fool proof recipe that everyone just loves and I’m going to show you how its done all on the Gasmate Voyager.

Look, this awesome side dish is not just a side dish, a lot of us these days have at annoying vegan or vegetarian friend that you hesitate to invite over for a barbie because you know that dreaded question is going to be asked “Have you got anything that doesn’t have meat in it?” Good news is you can just replace some of the ingredients below with vegan substitutes to keep them happy. Bad news is, you have to listen to them harp on about how they’re vegan for the rest of the evening.. (really, you aren’t all that bad)

It’s not crazy hard to knock this dish up either, you can get all the gear you need from www.4wdsupacentre.com.au and set yourself up like a real pro with the Gasmate Voyager. With all the essentials covered let’s get this stellar side dish done. Ladies and Gentleman, Grilled Stuffed Mushrooms.

 

What you will need:

  • Gasmate Voyager
  • Olive Oil
  • Portobello Mushrooms
  • Green Capsicum
  • Red Onion
  • Minced Garlic
  • 250g Bacon
  • 5 tbsp Oyster Sauce
  • Salt
  • Pepper
  • Mixed Herbs (dried)
  • Grated tasty cheese

 

Method:

Set your Gasmate Voyager to Med-high heat and place the lid down to warm up while you begin preparing your mushrooms. It is important that the grill side is completely clean as you don’t want the top side of your mushrooms to stick.

Start by taking your Portobello Mushrooms and carefully removing the stem as low as you possible can and set the stems aside. Most of the time this will be enough room for your stuffing but if you find that you may need a little more room, remove the gills with a small spoon careful not to damage the top side by going to deep.

Take the stems of the mushroom that you have removed and dice them as finely as possible and place them into a bowl.

Finely Dice your bacon, green capsicum red onion and place them in the bowl with the stems.

Add minced garlic, oyster sauce, mixed herbs, some salt and pepper to taste and mix well.

Now that your stuffing mixture is made, place the ingredients directly onto the Voyager hotplate and add a drizzle of olive oil to help the ingredients brown and soften up.

While your stuffing ingredients are browning, give the grill side of your Voyager a wipe down with a paper towel with some olive oil, this will prevent the mushrooms from sticking to the grill.

Place your Portobello mushrooms top side down directly onto your grill and one at a time using a spoon, take the stuffing from your hotplate and fill each mushroom with the filling mix. Repeat until all are done.

Top each of the mushrooms with the shredded tasty cheese and add a little salt and pepper to top them off.

Drop the hood of your Gasmate Voyager down and allow the mushrooms to cook for about 10-15 mins until the cheese has melted and begins to take on a brownish colour and crisp up.

Remove mushrooms from the Voyager and serve!

Best served with any meal or on their own but I think they make a great addition to a big brekkie.
